Tools for commercial argumentation

Members of staff will feel more confident about selling if they have information about the products on offer. If staff can tell well they can sell well. Examples of the type of information staff will need to know include:

  • a description of what the item is and an explanation of how it is served
  • where the produce comes from
  • where and how the local drinks are made
  • what the specialities of the establishment are and their origin.

Within the context of personal selling, the service staff should be able to: 

  • describe the food, wines and drinks on offer in an informative and appealing way, that makes the product sound interesting and desirable

1- A few rules:

  • Argumentation is not an explanation or summary of the recipe.
  • Avoid using words already used on the menu.
  • Avoid using terms such as "small" or anything that minimizes.
  • Imagine the drink as a client and as a server
  • Through what you say, the customer must imagine the content of his drink (colour, smell, size, taste of what is inside)
  • Avoid multiplying grandiloquent adjectives (exceptional, fantastic)

2-Don't forget these tracks:

  • The quantity and how it is served
  • The origin of the product its region, its country
  • The recognized qualities: label, Appellation, Bio... (Everything that makes it different)
  • Colour and intensity of the beverage
  • Texture: smooth, creamy,…
  • Flavours: sweet, salty, bitter, sour, fruity, spicy, alcoolic, light, fresh
  •  Give an argument when quantified (a hint ...) or in opposition (sweet/salty...).

3 - Tell stories about the spirits you are serving

Stories can be a useful technique for upselling a premium spirit. Due to basic human psychology and the way our brains are hardwired, it’s a lot easier to remember and repeat stories to others than it is facts. That’s the reason, for example, why some stories and legends have persisted for hundreds of years - they are very easy to remember and repeat. So don’t be afraid to use a little storytelling magic at your bar to upsell guests.

Remember - upselling needs to be subtle and gracious, and it needs to take into account the behaviors, preferences and tastes of the customer. An upsell should always be a suggestion or recommendation.
